Guys! I’m back! The past few weeks have been super crazy. I accepted a new position very unexpectedly, and that celebration brought along a slew of paperwork, tears, laughs, second guesses, paperwork, slight panic attacks, and, oh yeah, even more paperwork. Needless to say, my fledgling blog has fallen by the way side. But, I’m committed.. and when I commit, I commit. So here I am!
All this change has left me exhausted, and after a day of breaking the news that I’m leaving (to all my kids with attachment issues and their families) I am emotionally drained. Not to mention, I’m feeling the infamous midweek slump. I needed dinner- something fast and healthy, using ingredients I already had on hand.
B and I have been making a lot of homemade pizzas lately– we even bought our own pizza stone. It’s a fun thing to do with the kids, they like to get their hands in there and contribute. Our favorite is a proscuitto, fig, and arugula pizza, (which was even endorsed by a very talented chef in New Orleans!!)- I’ll post that recipe at a later date. Anyway, this recipe has left us with an abundance of proscuitto and arugula in the house,
Please excuse the lack of pictures– I decided to post this after it was already made but here’s what I came up with.
Warm Cannellini and Arugula Salad with Lemon, Prosciutto and Goat Cheese.
- 1 Can Cannellini Beans
- 2 handfuls Arugula, cleaned and dried
- 1/2 lemon, zested and juiced.
- 1/2 pack Trader Joes Proscuitto
- Crumbles of Goat Cheese
- 1 tbsp lemon infused olive oil
- Pepper
- Warm olive oil to medium heat in large saute pan.
- Rinse cannellini beans to remove starch
- Add lemon zest, lemon juice, and arugula, toss to combine.
- Shred packaged prosciutto and toss further
- Season with pepper to taste. (there’s more than enough salt in the prosciutto!)
- Remove from heat and crumble goat cheese, mix together
Voila!!

I’ll take step by step pics the next time I make it.. this one is definitely a keeper, and there’s lots of room for playing around with the recipe.
Creamy, zesty, fiberous goodness, lots of greens, ready in no time at all. Check check check, and check!
