Flat Iron Steak with Chimichurri Sauce

We just had the best. dinner. EVER. I love Sundays because sometimes it seems like the only day of the week where we can slow down, clean the house, do the errands we need to do, and cook what we want to eat.

A few years ago, B got a Himalayan Salt Block for Father’s Day and I love when we get to use it. It takes a while to heat up, but you can cook so many different things on it with relatively no other seasonings, and everything turns out super flavorful every time.

Today, we had a hankering for red meat, so we picked up a flat iron steak, cooked it on the salt block and served it with yummy mashed potatoes and perfectly roasted brussel sprouts.

We got the recipe for the chimichurri sauce  from All Recipes and it really brought the whole meal together.

I made the mashed potatoes with coconut oil and green onions which gave it a little extra flavor and healthier twist.
