I don’t know about you, but I LOVE the combination of sweet and savory. On a whim, I whipped up these delicious bars that are sweet and savory, are gluten free and have NO added sugar!! No artificial sweetener and no flour, you guys. Healthy, yummy, and easy on your tummy!
Sundays to me are all about relaxing, going with the flow, and savoring every last bit of freedom before it’s back to the grindstone on Monday. Today was an awesome Sunday. My new job will require a more formal wardrobe than I currently have, so my good friend and I headed to the outlets, about a half hour from me and got to work! I seriously lucked out and got so many pieces that I’ll be able to dress up or dress down, mix and match, I’m so excited… I may even debut some new outfits this week !
When I came home, I did some meal prep (more on that later), and afterwards I knew that I wanted to make some sort of healthy breakfast for the week. Strawberries had been on sale, and I had about a pound I needed to use.

Strawberry and Basil Tarts with Lemon Zest
- 2 cups Rolled Oats, separated
- 1 pound Strawberries, Cleaned and cut
- 1 tsp Vanilla extract
- 1 tsp baking powder
- Basil
- Bananas
- 1 lemon, zested
- 1 tbsp maple syrup. ( spring and get the good stuff, trust me)
- Preheat oven to 325 and grease 2 muffin tins.
- Wash and cut strawberries.

- In a small sauce pan on medium heat, cook strawberries and maple syrup, stirring as needed, about 10-15 minutes.
- Add vanilla extract and stir to combine.
- Rough chop basil and add basil and 1/2 of lemon zest.
- Remove from heat and allow to cool.
- While strawberry mixture is cooling, Grind ONE cup of rolled oats in food processors until smooth.
- In a large mixing bowl, combine baking powder, both cups of rolled oats, and bananas. Mix with hands until a dough-like consistency is formed.

- In a greased muffin tin, spoon oat mixture into each cup, pressing firmly. Leave some oats for topping.
- Spoon cooled strawberry mixture atop oats.
- Add remaining oat topping and lemon zest.
- Bake at 325 for 20-25 minutes or until golden brown.
- Allow to cool and top with additional basil if desired.
