Stretching-a-buck Weeknight Meal: Healthy Turkey Tacos with Beans and Arugula

What do you do when you’re three days before payday, just walking in the door from a 10 hour work day and an hour long workout and there’s very little in the fridge? In this house, you make tacos! Tacos are so versatile and fun, relatively inexpensive and can be ready in a flash.

Tonight , I walked in the door and just didn’t have it in me to cook a huge meal. It was pushing 7:00 and I was getting HANGRY. Luckily, last-week me must have known this was going to happen and bought a few things at Trader Joes (<3) for just this situation. It made enough for a filling dinner tonight, and at least 4 more servings for the rest of the week.

But first! The side dish…I was pretty proud of this one. I’ve been searching for the ever-elusive “Cauliflower Rice” at TJ’s for a few weeks now. The cashier told me they only get one shipment in per day, and he called it “the new coconut oil” so needless to say, it’s been really hard to get my hands on. So, I decided to make my own!

TJ’s sells frozen grilled cauliflower, so I snagged a bag of that, microwaved it according to the package, pulsed it in the food processor to my desired consistency, seasoned with lime juice, salt and pepper, and voila!

(You could throw some fresh cilantro in there if you’d like,  I didn’t have any on hand).

“Cauliflower Rice” with Lime

  • 1 Bag Frozen, Grilled Cauliflower
  • 1 Lime, Zested (I didn’t have any, so lime juice had to suffice)
  • Salt and Pepper to taste
  1. Microwave cauliflower according to package directions.
  2. Pulse in food processor to desired consistency
  3. Add zest and juice of lime, salt and pepper and stir to combine.

Turkey Tacos

  • 1 package TJ’s natural ground turkey
  • 1 packet low sodium taco seasoning
  • 1/2 can red kidney beans
  • 1/2 bag TJ’s fire roasted bell peppers and onions
  • Reduced Fat Whole Wheat Flour Tortillas
  • Handful or two of the “green” of your choice.
  • Guacamole

Brown Turkey in skillet. Add 1/2 cup of water and taco seasoning, toss to combine

In a separate skillet, warm 1/2 bag of fire roasted pepper and onion mix

To peppers and onions, add 1/2 can of red kidney beans and combine

When all ingredients are warmed, combine pans and add 2 handfuls of the green of your choice, (I had arugula to use up) Mix until arugula is wilted.

Serve taco mix on tortillas of your choice. As hard as I try, I just prefer flour tortillas to corn. So, I bought the healthiest flour tortillas they had.

We also had leftover guacamole (unheard of in this house) from the other night, so I added a dollop of that to each taco.

Quick, yummy, and pretty cheap. The beans and arugula add some nice fiber and leave you the good kind of full.
